Canada Day Breakkie!

Know how baked potatoes are just a reason to eat butter and bacon bits? Let’s face it, pancakes only exist to be doused in real maple syrup. The fact that they’re healthier just means you can add a little extra! Yes, yes, I know sugar is sugar, but this is liquid magic that comes right out of the most Canadian possible tree. So on Canada Day, whether you’re Canadian or not, I’m pretty sure we all deserve a free pass to load it up!

Here’s my Canada Day breakfast. What’s on your plate?

In your blender:

  • 1/3 cup rolled oats
  • 1 egg
  • 1/2 a banana
  • 3 tbsp coconut or nut milk
  • 1/4 tsp baking powder
  • 1/4 tsp cinnamon
  • Vanilla
  • Dash sea salt
  • 1/4 cup fresh blueberries

Fry up and serve topped with ghee or butter, and real maple syrup. I’ll be eating these with local bacon, sautéed greens, and a hot coffee. Serves one, so mix up as much batter as you need for you and your crew.
